Toyohashi curry udon is a local specialty of Toyohashi City, Aichi Prefecture. It looks like ordinary curry udon, but as you keep eating, grated yam (tororo) and rice appear from the bottom of the bowl.
In this article, I introduce the Toyohashi curry udon I ate at Mugisho Matsuya in Toyohashi in October 2026, with photos.

What Is Toyohashi Curry Udon?
Toyohashi curry udon is a local style of curry udon served in Toyohashi City. Its biggest feature is that the bowl has two layers. The top is curry udon, and underneath it are grated yam and rice.
A poster by the Toyohashi Convention and Visitors Bureau on the wall of the restaurant read, “Grated yam and rice under the udon!” and “Toyohashi curry udon is delicious twice.” You can enjoy it in two ways: first eat the curry udon, then eat the tororo rice with the leftover curry.

Toyohashi curry udon is said to have rules, such as using homemade noodles and quail eggs from Toyohashi. The toppings and the taste of the curry differ from restaurant to restaurant, so it is also fun to compare them.
The Restaurant: Mugisho Matsuya
This time I ate at Mugisho Matsuya, an udon and soba restaurant in Toyohashi City. The yellow noren curtain bears the name “麦匠 まつや,” and next to the entrance is a sign for its specialty, “anago ten-zaru” (chilled noodles with conger eel tempura).

Trying the Curry Udon
What arrived was a black bowl full of curry. On top were two quail eggs and a cherry tomato, with chicken, onions, and green onions inside. A small dish of chopped green onions and some pickles came with it.

The curry is mild enough for children to eat, and the noodles are nicely firm and chewy. It is extremely delicious.
Tororo Rice Appears from the Bottom
After finishing the udon, I scooped the bottom of the bowl with a Chinese-style spoon. Rice and grated yam came out from under the curry.

You can mix the leftover curry and grated yam into the rice and enjoy it to the last bite.

I have sometimes added rice to curry udon before, but this was a taste I had never had, and it was delicious.
