Kure reimen is the local noodle dish of Kure City, Hiroshima Prefecture. Although its name means “cold noodles,” it is a dish unique to Kure: flat Chinese-style noodles with a sweet and spicy soup. I had Kure reimen at “Kureboshi Seimenya,” a shop near JR Kure Station.

In this article, I introduce the “Kureboshi Reimen” at Kureboshi Seimenya, how to order, where the shop is, and how to fit a visit into your sightseeing in Kure.

I stopped by this shop at lunchtime on August 22, 2026, after visiting the Yamato Museum and the JMSDF Kure Museum (Tetsu no Kujira-kan). All photos in this article were taken that day.

1. What is Kure reimen? | Flat noodles with a sweet and spicy soup

Kure reimen is a local noodle dish born in Kure City. It is said to have started around 1955, when “Chinraiken,” a food stall in Kure that served wonton noodles, created it for the summer, when wonton noodles did not sell well.

It is characterized by flat Chinese-style noodles made especially for reimen, served with a sweet and spicy soup. If you like, you add “sukarashi,” vinegar with chili peppers soaked in it. Eating reimen even in winter is said to be part of Kure’s noodle culture.

2. The “Kureboshi Reimen” I had at Kureboshi Seimenya

I ordered the “Kureboshi Reimen” (890 yen), number 24 on the menu. Cold noodles and soup came on a white plate. On top were two kinds of chashu (chicken and pork), a seasoned egg and thinly sliced cucumber.

The menu said, “Kure reimen, a dish you should try at least once when you come to Kure,” and “The flavorful niboshi (dried sardine) broth is irresistible!” Kureboshi Seimenya is a ramen shop that uses niboshi from the Seto Inland Sea. The reimen soup also uses niboshi broth.

Perhaps because the soup is made with niboshi, it was very easy to eat. The noodles are chewy and mix well with the soup, making it a truly delicious dish.

Chewy noodles

The noodles were slightly thick and smooth. The soup collects at the bottom, so mix it well with the noodles before eating.

Change the flavor with “sukarashi”

The menu said, “Try adding sukarashi for a change of flavor!” Adding sukarashi when you are about halfway through is a typical way to enjoy Kure reimen.

3. Menu and how to order

The menu said you can choose your ramen seasoning from three options: “niboshi soy sauce,” “Seto seaweed salt” and “aged miso.” However, for noodles marked with a star (such as the Kureboshi Reimen), you cannot choose on the order sheet, so you only write the number. You can also make requests such as no green onions.
